The author's thesis is that it is insulin that causes our bodies to store fat. We must therefore discourage our bodies from over-producing insulin.

'You drink apple juice, your body thinks it has eaten 20 apples, and so releases the amount of insulin to mop up the 20 apples.' Much better, she suggests, to just eat an apple.
It is a fascinating read, and I think she makes a very convincing case.
But basically I just want to be eating real, wholesome, unadulterated food, and plenty of it.
Simpler.
